Because he could not agree a new contract with the club.  The club got the result of weeks of negotiations. He has officially expired on June 30.

“After careful consideration and consideration. I can confirm that I am leaving Crystal Palace after two wonderful years. I enjoyed my time at the club and would like to express my heartfelt thanks to everyone involved with the club, especially the fans and staff, for warmly welcoming me into the South London family.”

“Also I wish the club continued success in the future. And I wish you all the best in the coming season,” wrote Cahill on Instagram.

By the way Crystal Palace, under new coach Patrick Vieira, has reinforced the position at centre-back to replace Cahill, having signed Joachim Andersen and Mark Gei.
